1. Definition

Food allergens are an immune system reaction that right occurs after eating some certain foods. Even if eating with a small amount of allergenic food also cause some signs or symptoms as a digestive problem, rash, or respiratory tract.  In some special people, food allergen can cause severe symptoms or even life-threatening reaction which is called as anaphylactic shock.

For some people, an allergic reaction to some certain food can make them uncomfortable but it’s not serious. To other, the allergic reaction can be considered as serious and even life- threaten. The symptoms normally develop within minutes to an hour after eating contaminated foods.

The most common food allergy symptoms include:

– Tingling in the mouth.
– Rash, itch or eczema.
– Swelling of the tongue, face and throat, or other parts of the body.
– Wheezing, stuffy nose or shortness of breath.
– Abdominal pain, diarrhea, nausea or vomiting.
– Dizziness, dizziness or fainting.
– Anaphylaxis

There are some reactions to foods that cause symptoms similar to food allergies. If there are gastrointestinal symptoms, it is very likely that it is not the food allergy, can not tolerate food. Conversely, if a food allergy really, even small amounts of food can cause allergic reactions. Because food intolerance can include some of the signs and symptoms of food allergies – such as nausea, vomiting, cramping and diarrhea – people often confuse the two.

One of the complex aspects of food intolerance diagnosis is that some people are sensitive but not the food itself but with a substance or ingredient used in food preparation.

Common conditions that can be confused with food allergy symptoms include:

The absence of an enzyme needed to digest enough food. It is not possible to have the full amount of some enzymes required to digest certain foods. Insufficient amount of lactase enzyme, for example, reduces lactose digestibility, the main sugar in dairy products. Lactose intolerance can cause abdominal cramps, diarrhea and excess gas.
Irritable bowel syndrome. Some foods may cause signs and symptoms of irritable bowel syndrome. It can be seen that certain foods will cause abdominal cramps, constipation or diarrhea. Stay away from these foods to avoid symptoms.
Food poisoning. Sometimes contaminated food can mimic allergic reactions. Some fungi and rhubarb can be toxic. Bacteria in damaged tuna and other fish can also cause a toxin to cause harmful reactions.

Sensitive to food additives. Some people have digestive reactions and other symptoms after eating certain food additives. For example, sulfites used to preserve dried fruit, canned goods and alcohol can trigger asthma attacks in susceptible individuals. Other food additives can trigger a bad reaction including MSG, artificial sweetener and food coloring.
Periodic stress or psychological factors. Sometimes think only a food can make sick. The reason is not fully understood.
Celiac disease. Celiac disease is sometimes called gluten allergy, it is not a real food allergy. Like a food allergy, it is not related to immune system responses, but it is a unique immune system response that is more complex than a simple food allergy. Digestive status is triggered by eating gluten, a protein found in breads, pasta, cookies, and many other foods containing wheat, barley or rye. If you have celiac disease and eat foods that contain gluten, an immune response that causes damage to the surface of the small intestine and the inability to absorb some nutrients.
